Most of the food prepared on Blacklands cotton farms remained very plain. Starchy, simple foods provided the energy for long days spent both in the fields and in the house. By working diligently to keep food on the table, farm women fulfilled the most basic needs of their families. Those who could afford to do so concentrated substantial amounts of their energies on feeding their families as well as on keeping their houses. But for many Blacklands women, cooking and keeping house were but part of their overall duties. These women performed field labor along with their domestic duties. How they balanced the two demanding endeavors is the subject of the next chapter.
